No, they're more subtle than that, they intercept a copy of the page you asked for whilst it's in transit so you never know they got a copy and the site you got it off never sees their IP address...

It's to scan for passwords etc as well. People tend to use the same password and with a email address and some basic info you can probably access many sites/shops/banks using the same details.
The worst thing to do is your email password anywhere else as once they have that they can ask for password resets from many sites and find out which one's you are on by intercepting the email and resetting all your passwords. Happened to a neighbour, they basically got into his web mail and put a forwarding rule on so he didn't know it was happening.
