Clem's Cheesecake.......
Ingredients;
Filling;
5 gelatine leaves
2 oranges,
1 lemon
4oz of Caster sugar
1lb of Cottage cheese
5 fluid oz of Double cream
2 tablespoons of milk

Base;
8oz digestive biscuits
3 tablespoons of Golden Syrup
2 tablespoons of cocoa powder
2oz of butter

1. To make the base; place biscuits into a bowl and crush up to a fine crumb.
2. Measure out the Golden Syrup and place into a medium size saucepan, add the butter and cocoa powder, heat gently untill the butter has melted, remove the pan from the heat, add the crushed biscuits and stir in gently.
3. Pour biscuit mixture into the base on a 8 inch loose bottom cake tin, spread arounf the tin and press firmly, Put cake tin into the fridge to set.
4. To make the filling; measure out four tablespoons of water and put into a small glass/tumbler and add the cut up gelatine, place tumbler into a saucepan of water and heat gently to dissolve the gelatine.
5. Scrub the oranges and lemon, grate the rind from the fruits and place into a bowl. Squeeze the juices from the fruits and pour juice into a measuring jug.
6. Place cottage cheese into a blender and blend till smooth and creamy, add to the bowl with the rind, pour the melted gelatine into the fruit juices and top up with cold water to half a pint, add the sugar and stir in till sugar has dissolved, add the fruit syrup mixture to the bowl with the cottage cheese and the rind and stir in.
7. Place the cream and milk into a bowl and whisk till the cream has thickened, stir into the the cheese mixture and stir / hand blend well.
8. Pour mixture from the bowl into the cake tin over the biscuit base, return to the fridge to set.

Serve and enjoy. :shark:
